Judith Rodriguez is a professor in the Department of Nutrition and Dietetics at the University of North Florida. Over the past thirty years she has been involved in a variety of activities related to nutrition education. She received her bachelor and master’s degrees here, at NYU and a doctoral degree at Rutgers University. She is the 2010-2011 President of the American Dietetic Association, has received numerous awards and recognitions and has publications, including the Latino Food Lover’s Glossary and The Diet Selector and Contemporary Nutrition for Latinos.
